Stuffed Green Peppers

This is seriously one of my very favorite things to make.  It is of course tasty, but I also love how easy it freezes.  This is a major time saver for me.  I like to make two of something and freeze one.  This is the perfect dish to do that with.  The recipe below is only for one pan however.  It you want to make two pans, just double it!  I am making this today and will take picture and post them later :)

Ingredients:

4 large green peppers
1 lb ground turkey
3 garlic cloves, minced
1 large onion, chopped
1 can diced tomatoes, drained
1.5 cups cooked rice
1/2 cup queso cheese
1/2 cup sour cream
2 tsp salt
1/2 tsp black pepper

1.  Preheat oven to 350.  Slice the pepper in half length-wise.  Remove stem, white parts, and seeds.  Set aside.

2.  Saute the turkey, onions, and garlic until turkey is cooked and onions are translucent.  Mix in the rice, tomatoes, queso cheese, sour cream, salt, and pepper.  Taste mixture to make sure seasonings are correct.

3.  Pour one cup hot water in the bottom of a 9x13 dish.  Stuff each pepper with the mixture and place in pan.  Cover and bake for 30 minutes.  Uncover and bake for another 20 minutes. Periodically spoon some of the juices over top of the peppers so they don't dry out.  This is usually enough time in the oven when I make this, but if you want the peppers really soft, you may want another 10-15 minutes.

  2. Yum Yum! I love stuffed peppers. This recipe looks so good. The recipe I use is quite different so I'll have to try this one sometime.

  4. That sounds so good. I am totally going to make this next week. And the best part is, its healthy. So now I don't have to worry about the beer I am about to drink making me less slim.

  5. This sounds good Ashley! I don't get very many comments so I just saw your post from the 8th! Thank you very much! Kevin loved going with me to WW. He was one of the only men there and got a lot of attention. He also "won" a $100 gas card door prize once. I think the drawing was rigged. lol It has changed our life for the better. I highly suggest it.
