Well I hope everyone had a great weekend! Mine was full of relaxing things. Hubby and I went to see Duplicity on Friday. I love Julia Roberts and Clive Owen is a major cutie, but this wasn't my favorite. I usually love movies that make me think, but this one was even a little too much for me. I felt like it just needed a little more....something.
On the other hand, I started a new anti-biotic about an hour before we got there (for a UTI, can we spell FUN?) and had a reaction to the medicine. I have never had that happen before and my lip swelled up and I was super itchy. It was really wierd. So I think I was a little distracted because of that. When I got home I took a Benadryl and all was better.
Okay so on to Menu Plan Monday. I am really slacking these days. Sometimes it is just so much easier to go out! Anyway here is what I got planned this week:
Monday: Left over Spaghetti with Shrimp & Garlic Sauce
I completely forgot to take a picture, but here the is recipe:
Ingredients:
1 tbsp olive oil
1 tbsp butter
4 garlic cloves, minced
2 tbsp finely diced red bell pepper
2 tbsp tomato paste
1/2 cup dry white wine
1 lb spaghetti
12 oz raw shelled shrimp
1/2 cup heavy cream (I didn't have this so I used light cream cheese with a little milk)
salt and pepper
parsley to garnish
Directions:
Cook the spaghetti in salted water until done and drain.
Heat the oil and butter in a pan over medium-low heat. Add the garlic and bell pepper and saute until the garlic just begins to color. Stir in the tomato paste and wine. Cook for 5 minutes, stirring.
Add the shrimp to the sauce and raise the heat to medium-high. Cook for 3 minutes or until the shrimp are pink. Reduce the heat and stir in the cream (or cream cheese) stirring constantly until thickened. Season with salt and pepper.
Stir in the spaghetti and sprinkle with parsley.
Serves 4
Tuesday: Baked Chicken with Rice and Roasted Broccoli
Wednesday: Caesar Salad using left over chicken from Tuesday with Homemade Dressing
Thursday: Seared Salmon with Homemade Mashed Potatoes and some kind of veggie
Friday-Sunday: Going back to Ann Arbor to be with the family for Easter!

I came to peek at your menu. Can you share your dressing recipe?
I hope you are not still taking that antibiotic that you reacted to. I have found a solution to my chronic UTI's, but not before becoming allergic to an antibiotic. You only mentioned the benedryl, so I was worried and this is my first visit. I'm sorry to step on your toes. I had taken the one I reacted to, many times before, too, and thought it was a fluke. The doctor said its a good thing I didn't stop breathing.. so please be careful.
I'm going to peek around some more, now. I hope you feel better.

ReplyDeleteI"m so sorry you had a reaction to the medicine! That's no fun! Your menu looks great! You're food looks pretty healthy; I"m impressed! We went to Chili's yesterday for lunch, and McDonalds for the kids for dinner. ha. I did NOT put that on my menu post!
